ARTICHOKE: Its edible portion consists of unopened flowers, buds. Its buds are cultivated as food. It has an unusual sweeter taste. You can cook various tasty dishes with artichokes such as Garlic Parmesan roasted Artichokes, Chicken Picatta with Artichokes, Spinach Artichokes Crustless Quiche, etc.  

It assists in various ways. It averts us from heart diseases, cancer, and severe liver problems. It is rich in fiber which makes the digestive system strong. It detoxifies the body. It helps you in losing weight in a healthy manner. 

AUBERGINE (MELONGENE): It is commonly known as eggplant because of its egg-like shape. It has a fresh purple color which compels us to enjoy its taste. Aubergine is used in many dishes i.e Miso Roasted Aubergine, Scruffy Aubergine Lasagne, Aubergine curry, etc. 

People know it as a low-calorie vegetable because it helps to lose weight. It is also anti-inflammatory. It contains antioxidants which help in preventing harmful diseases. 

ASPARAGUS: It is a well-known vegetable from spring season. It contains proteins, Vitamin A, K, C and E. It also contains fiber, potassium and anti-oxidants. Male and female Asparagus are different species. Female Asparagus produce bright red berries and has less spear growth than males. Asparagus has two types i.e White Asparagus and Green Asparagus. White Asparagus is actually Green Asparagus that has never been exposed to Sunlight. 

In the beginning, Asparagus spears are the size of pencil lead. It take 3 years for them to be thick enough to harvest. Asparagus is helpful in making really tasty recipes like Baked Asparagus, Grilled Asparagus, Asparagus Blue cheese Pasta, 

It has fewer amount of sodium and cholesterol thus one must include it in their diet. Its benefits are many. It is really helpful in maintaining your B.P. It prevents us from serious diseases such as cancer, diabetes and UTIs (Urinary Tract Infections).

China is the leading producer of Asparagus.

ARGULIA: It is a rare vegetable and is known to few people. It belongs to the family of Brocolli and Brussels sprout. This vegetable has a tangy flavor. It is a kind of leafy green vegetable with health benefits similar to others. It is loaded with green notes and other minerals such as Calcium, Magnesium, and Potassium. It is added in salads such as Argula Pear salad, Argula Salad with Parmesan, etc. 

It has a lot of benefits and had a great impact on our physical and mental health. It reduces the risk of heart diseases, obesity, and diabetes.

ALFALFA SPROUTS: They are actually shoots of the Alfalfa plants. They are harvested before the Alfalfa plant is fully grown. It contains vitamins A and C and minerals such as Potassium and Calcium. 

It has so many benefits. People with iron deficiencies must try these as they fulfill your iron requirements. They help in healing the wounds. They make our bones stronger. They help in losing weight. They are used in Salads.

ASIAN RADISH: It is high in Potassium, Phosporous and Magnesium. It also contains Vitamin C and B6. Both the roots and leaves are edible. It is named Asian Radish because it is famous among Asian people who love to make spicy Radish curry, Salads and add it with other veggies to make curry. Its Parathas are very famous in Pakistani and Indian cuisine.  

It is very beneficial to treat the swollen gums, headaches and fever. It gives you a cooling effect. 

AMARANTHUS: It is a short-lived plant species that are cultivated as plant species. It is a leafy vegetable. It is gluten-free. 

It is a rich source of energy and proteins. Its grains boost energy. It makes us feel active and energetic. It is added to soups, salads, and curries. You can add Amaranth leaves in soups, stir fry’s, curries or simply fry with oil and lemon.  It can also stir fry and serve with other dishes for a delicious flavor. It strengthens our bones and prevents hair-loss and cardiovascular diseases and osteoporosis.  It is really beneficial for toddlers and babies. It acts as a natural pain killer and strengthens the immune system and is easy to digest for babies. 

ACORN SQUASH: It contains a rich amount of thiamine, folate, Vitamin A, B6, and C. Winter squash is commonly added to spaghettis curry and it tastes delicious. It is also added to yummy baking recipes. Mainly, it is cooked in a simple way or with meat and cheese. It is eaten after baking or roasting or even as a stuffed vegetable.  You can make really yummy dishes with acorn squash like Baked Acorn squash, Sausage Apple rice stuffed squash, Roasted Acorn Squash, Stove top Acorn Squash Mac n Cheese, and many more recipes. 

Acorn is one of the vegetables that start with A squash protects us from cancer, asthma, and arthritis.

AVOCADO: Avocado is produced in the first or second year from when the trees are planted. The root stock is also better suited for Florida soils. Avocado trees can’t tolerate flooding or poorly drained soils. 

There are 5 major groups of avocado cultivation. Mexican ones are small fruits. Gautemian one is small but long fruits grown in mid season and many varities. West Indian one is most early variety with Big South Fia fruits. Hybrids between West Indian ones and Gautemalan are also common.

It promotes Eye health and control blood pressure. It has anti-inflammatory properties. It regulate blood sugar levels and protect against cancer.
